This Venus de Milo Soup is so hearty, it can be a complete meal. You can substitute quick-cooking barley, rice or noodles for the orzo. This recipe makes a large amount, so you can have leftovers for lunch or freeze for another meal.

Venus de Milo Soup Prep Time: 15 min
Cook Time: 45 min
Ready In: 60 min

Servings: 7

Ingredients
1 lb Extra-lean Ground Beef or Ground Turkey (7% fat)
3 cup Water
5 cup Fat-free Beef Broth
1 large Onion, chopped
1 pkg (16 oz) Frozen Mixed Vegetables
1 can (14.5 oz) Stewed Tomatoes, not drained
1 can (8 oz) Tomato Sauce
¼ tsp Salt (optional)
1/8 tsp fresh Ground Black Pepper
¾ cup uncooked Orzo or quick-cooking Barley
1 tbsp grated Parmesan Cheese

Directions
In a large pot that has been sprayed with nonstick cooking spray, brown meat. Add all ingredients but the orzo and Parmesan cheese.
Bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Add orzo and cook for 15 minutes.
Serve with a sprinkling of Parmesan cheese.
NOTE: One serving is an excellent source of fiber.
