Spicy Chicken Thighs are drenched in low-fat plain yogurt, hot salsa or picante sauce, curry powder and ground cumin for a good long bath, then baked. These also could be called jumbo Buffalo thighs.

Servings: 4

4 large skinless Chicken Thighs
1 container plain low-fat Yogurt (8 oz)
ΒΌ cup Hot Salsa or Picante Sauce
1 tbsp Curry Powder
1 tsp Ground Cumin

Place the chicken in a glass dish. In a small bowl, combine the yogurt, salsa, curry powder and cumin. Pour over the chicken, turning to coat. Cover and refrigerate at least 6 hours or up to 24 hours.
Heat the oven to 375 degrees. Transfer the chicken and sauce to an oven-proof dish prepared with nonstick pan spray. Bake uncovered, 40 to 45 minutes, or until the chicken is tender and cooked through.

Buffalo wings were invented in Buffalo, New York by Teressa and Dominic Bellissimo in 1964 at The Anchor Bar. The name from the city stuck with the food.
Buffalo wings are deep-fried pieces of chicken that are then coated in a tangy sauce. Sauce is then added to complete them. Typically, there are additional sauces to dip the wings in such as ranch or blue cheese.
Building on its reputationas the birthplace of Buffalo wings, Buffalo has hosted the National Buffalo Wing Festival every year since 2002. In 2010, more than 70,000 people attended and half a million wings were consumed.
This recipe eliminates the frying to reduce the fat content of the chicken.
