This Spanish Quiche is an easy supper or brunch dish that will be a favorite for anyone who likes Mexican food. It is sooo simple to make, yet your guests will think you spent all morning making it. Let’s keep that a secret, shall we?

Cook Time: 50 min
Ready In: 70 min

Servings: 8

3 medium Whole-wheat Tortillas (8-inch)
1 can (16 oz) fat-free Refried Beans
1 can (4 oz) diced Green Chiles
½ cup sliced Green Onion
4 oz grated reduced-fat Cheddar Cheese
1¾ cup Egg Substitute (equal to 7 eggs)
¼ cup fat-free Milk
¼ tsp Paprika

Preheat oven to 350 degrees. Spray a 9-inch pie pan with nonstick cooking spray. Cut 2 tortillas in half and place each half in the pan so that the rounded edge is 1/4 inch above the rim. Place the remaining tortilla in the center of the pan.
Spread beans over tortillas. Top with chilies, onion and cheese. Mix eggs with milk and pour over top. Sprinkle with paprika.
Bake for 50 minutes or until a sharp knife inserted in the center comes out clean. Let sit for 10 minutes before cutting into eight wedges.

Tips & Notes
Eggs used to get a bad health rap, but rest assured, unless you eat three or four eggs a day, the egg quantity in this recipe will not harm your blood sugar levels. As with all food, eat in moderation. In other words, do not have this quiche three times a day, every day for a month.
