Apple Potato Pancakes are a delicious way to start the morning. Your family may actually sit at table for breakfast. If you can’t find pecans, substitute any of your favorite nuts.

Apple Potato Pancakes Prep Time: 15 min

Servings: 4

½ cup Potato Granules
1½ cup boiling Water
2 large whole Eggs and 4 Egg Whites
2 tsp granulated Sugar
½ tsp ground Cinnamon
1 cup peeled and grated Granny Smith or Golden Delicious Apple
¼ cup Pecans
1 container plain nonfat Yogurt, Sour Cream or Applesauce (optional)

To prepare the potatoes, add potato granules to a medium-sized bowl. Gradually pour the boiling water over the potato granules, whisking continuously to mix and whip.
In a small bowl, beat together the eggs, sugar, and cinnamon. Beat into the potatoes. Fold in the grated apple and chopped pecans.
Bring a nonstick skillet or griddle treated with nonstick spray to temperature over medium heat. (If using an electric griddle, preheat to 350-380 degrees F)
Cook the pancakes on both sides until golden brown. Serve hot, plain or topped with plain nonfat yogurt, sour cream or applesauce.
